He probably assumed he died of his wounds because there’s a crapton he could have died from. #1 would be shock. Although he is a big orc, shock can do a heck of a lot to the mind and body, even if you are a fantasy creature. Reason #2 would be from blood loss. Cutting an arm off like that, you also cut a major artery, assuming orc and human biology is fairly similar. Unless they have some sort of orc medic behind lines (which they probably did, seeing as how Azog survived), he would pass out after 30% bloodloss, and need an immediate transfusion (which I doubt they had the technology to do), after 40% blood loss. Finally, reason #3, if he made it through those things, you would need to heal from that wound, which means you risk infection and all sorts of nasty things. Especially in the filthy conditions orcs live in, I’m incredibly surprised he survived (in the movies). All those reasons are extremely viable for Thorin to have thought Azog died long ago during or shortly after that battle.
