I’ve never liked the eye thing, I like to think of him as more having no form in LOTR, and if he did, more like a nazgul type look, not a giant eye.
The whole “flaming eye was an interesting choice thematically, but I prefer if his current form was shrouded in mystery.
I think it makes a lot of sense in hindsight; not only is the Eye of Sauron an interesting thematic choice, but it also highlights the shift in character from his being in hiding and scheming (as the Necromancer of Dol Guldur or even as a Nazgul-like formless shadow) to outright revealing himself and declaring open war via endless legions of orcs.
To me at least, it makes sense for Sauron the General to be less mobile (though no less intimidating), and in more of a "command" position, given the greater emphasis on war vs. journey in the later part of the story.

Sauron the Wraith king along with The Witch King and Morgoth
It is not a change that bothered me too much, like the lack of Tom Bombadil or the inclusion of Tariel, but I kinda wish they had kept it like in the books.
I like how he was represented in the films.
